Roasted Sweet Potatoes with Bacon
Easy recipe for savory roasted diced sweet potatoes with bacon lardons, tossed with a blend of spices

- 1.5 lb sweet potatoes any color - about 3 medium
- 4 oz bacon sliced into 1/4" thick strips (lardons)
- 2 tsp garam masala see note
- 2 tsp brown sugar
- 1/2 tsp garlic powder
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 Tbsp grapeseed oil or any neutral oil
- 1/4 cup cilantro or parsley -optional
Preheat oven to 425°F
Mix seasoning for sweet potatoes in large bowl: garam masala, brown sugar, garlic powder, cinnamon, salt, and pepper
In large bowl, toss sweet potatoes with seasoning and grapeseed oil
Spread seasoned sweet potatoes out on 9x13" baking sheet. Evenly distribute sliced bacon. Shake pan and make sure everything is in a single layer on baking sheet.
Roast for 40 minutes at 425°F, flipping bacon and potatoes halfway through. If bacon isn't crisp enough at the end of cooking time, broil for 1-2 additional minutes. Watch closely to avoid burn.
Serve sweet potatoes as is, or sprinkle with parsley or cilantro
**Garam masala is a blend of Indian spices, usually consisting of cardamom, cinnamon, cloves, coriander, cumin, curry leaf, mace, and peppercorns. You can make your own from ground spices, or get fancy and grind your own. For a cheater version with spices you probably do have on hand, just use equal parts ground cumin, coriander, cinnamon, and cloves.
